Cheese Fondue

Cheese Fondue
 
 

Ingredients
2 cups shredded mild cheddar cheese
2 cups shredded sharp cheddar cheese
1 cup grated Parmesan cheese
¼ cup all-purpose flour
1 teaspoon dry mustard
2 cups white wine
2 teaspoons Dijon mustard cubes French bread

Directions
1. Combine the cheeses, flour and dry mustard. Pour the wine into the fondue pot, slowly bring to simmering point. Add heaping tablespoonfuls of cheese mixture at a tie, stirring after each one until it has melted.
2. Continue process until all the cheese has melted and mixture is thick. Stir in Dijon mustard, season with pepper to taste.
3. Stir until fondue is bubbling and smooth. Keep hot over burner. Supply fondue forks or skewers for dipping cubes for French bread. This can be made in a pan a day ahead. Keep covered in refrigerator. Reheat gently in fondue pot just before serving.
